I made this easy slow-cooked meal for this first time a few days ago and it was a big hit. The cookbook I pulled the from calls it ‘Chicken Cacciatore’ but it’s certainly not the traditional take you might expect to find where chicken cacciatore is served. Nonetheless, it’s a keeper for our family!
Start by thinly slicing 1 medium onion:
Place the sliced onion in the bottom of your crock-pot:
The recipe calls for a 3lb. chicken cut up – I didn’t have one defrosted so I used 3 boneless skinless chicken breasts. Place whatever chicken you choose on top of the onions:
Take a damp paper towel and wipe down some mushrooms. Don’t rinse them under the faucet, it makes them tough and nasty. This mushroom tip brought to you by my previous obsession with all things Rachel Ray. You’re welcome. I only wiped these down so I could add the little aside that my husband thinks it’s offensive I don’t generally wipe down mushrooms when I’m cooking with them. News flash: I’m still alive!
This called for a 4 oz. can of sliced mushrooms but I think canned mushrooms are grody and wrong on so many levels (Yeah, this is coming from the girl that doesn’t clean the fungi, I know). I just sliced 5 or 6 good-sized ones:
Then you need a bowl, garlic, 2/6 oz. cans of tomato paste, oregano, basil, bay leaves, celery seed (if you have it…I didn’t), a dry white wine (I only ever have Riesling so Riesling I used), salt & pepper:
Add tomato paste, 1 tsp. salt, 1/2 tsp. pepper, 2 cloves minced garlic, 2 tsp. oregano leaves, 1/2 tsp. basil leaves, 1/2 tsp. celery seed and 1/2 cup wine to bowl and stir:
Add sliced mushrooms & combine:
Add tomato and mushroom mixture to chicken and one bay leaf:
Cook on low for 8 hours or on high for 4. I took each chicken breast out when it was done cooking and sliced it before stirring it back into the sauce:
I then boiled up some linguine noodles and combined them with the chicken and sauce in the crock-pot. Served with a little salad & homemade ranch dressing along with my take on homemade garlic bread:
This was a real crowd pleaser and the simplest thing I’ve made in a long time! Seriously, what busy mom doesn’t love her crock-pot?!

A long time ago when I worked full time, our dinners from Monday to Friday was made from the crock pot! Huge time saver. There are so many things that we can cook in there. That meal looks delicious.
